It’s hard to beat a nice coffee and a scone around 11am (or any time of the day for that matter)! Without being biased, Caroline bakes a mean scone. In our house, I generally stick to the savouries whilst Caroline is the dab hand when it comes to the sweet things! Suits me!
Ingredients
– 230g self raising soda bread flour
– 50g caster sugar
– 50g butter
– Buttermilk
Extras
– Cherries
– Chocolate chips
– Raisins
– Raspberries
Method
1. Preheat your oven to 200°C
2. Mix the flour and sugar and then rub in the butter
3. Add the buttermilk a splash at a time while mixing with your hands until you get a sticky (but formed) dough
4. Put the dough onto a floured board and roll flat (about 2-3cm thick)
Cut the scones with a ring cutter
5. Place the scones onto a lightly floured baking tray and bake for 12-15 minutes or until golden
6. Put the scones onto a cooling rack and allow to cool completely before dusting with icing sugar
Notes
– Add cherries, chocolate, raisins etc just after you rub the butter in
– Serve with good butter and jam and dollop of lightly whipped double cream (if you want off course)
