I mentioned a while ago, foraging is something that interests me a lot. Having a lack of knowledge in the area means it’s something that I don’t tend to do often.
When the opportunity came up to join Clare McQuillan (local foraging expert) at the stunning Hillsborough Castle Gardens I was delighted to go along and learn a bit more. Caroline and I joined a group of keen amateurs at the event organised by Simon & Jilly Dougan (The Yellow Door).
Initially the weather wasn’t kind to us, but it soon cleared up to be an amazing day of learning and eating ‘weeds’.
Clare’s passion and knowledge for the subject is amazing. We were all pleasantly surprised at the amount of edible things growing all around us.
After our walk around the gardens and surrounding forest we went back inside and enjoyed a delicious 3 course lunch prepared by The Yellow Door team which used a lot of the items that had been foraged.
