Simple Linguine

This is simplicity at its best. Lots of fresh flavour that the whole family can enjoy. A glass of crisp white wine would be perfect on the side. A Picpoul would be perfect.


150 g Dried Linguine Pasta
1 Clove of Garlic (bruised)
2 tbsp Extra Virgin Olive Oil
Handful of Fresh Basil (chopped)
Black Pepper
Parmesan Cheese


1. Cook the pasta as per packet instructions in lots of boiling water (with salt) until al dente

2. Put a frying pan on medium heat and add the Extra Virgin Olive Oil.

3. Add the garlic to the oil making sure it does fry too quickly. You just want to flavour the oil.

4. Drain the pasta.

5. Remove the garlic from the frying pan, turn off the heat and add the freshly cooked linguine.

6. Add the basil, lots of freshly ground black pepper and toss everything together.

7. Serve in a warm bowl with lots of shaved parmesan cheese on top.

8. Enjoy with warm crusty bread.
