The Perfect Burger

I absolutely love a good burger! So, for you, what makes The Perfect Burger?  Personally, I don’t really like tomato on my burger (unless they’re sun dried). On my quest for the perfect burger I had a nosey around the tinterweb to see what ingredients should be used.  For me, a homemade burger (or bought one for that matter) should consist of some or all of the following:
  • Ground/minced beef
  • Onion
  • Breadcrumbs
  • Salt
  • Pepper
Optional extras include:
  • herbs (rosemary, thyme, parsley, coriander)
  • spices (cumin, coriander, chilli
  • bone marrow
During my research I came across a fantastic narrative about burgers in one of my recent cookbook purchases.  Namely, Hawksmoor.  Hawksmoor is an English based steakhouse with raving reviews.  The first recipes in the book are for a burger and a burger bap.  So after seeing that the ingredients for this ‘The Perfect Burger’ is bone marrow and minced beef, I was intrigued. After contacting The Meat Cleaver (now Smyth & Cleaver)  I collected some bone marrow and freshly minced chump steak (once on the coarsest setting).  I was now armed to created the ‘The Perfect Burger’.
The recipe is very simple, but the flavours are incredible: Dressing your burger What are your favourite burger toppings?:
  • Lettuce
  • Tomato (not for me thanks)
  • Cheese (millions of varieties)
  • Pickles
  • Onion (raw, pickled, fried, battered, tobacco’d etc)
  • Sauce (ketchup, mustard, HP, BBQ, mayo etc)
  • Jalapeño’s
  • Bacon (mmmmm, bacon)
  • and the list goes on indefinitely
